
The restaurant is also known for its signature dish, the “Pig Picnic,” a massive spread of roast pork loin and pork belly served with vegetables, lettuce cups, fresh baked bread, and sides like dill yogurt, chimichurri, serrano, Veracruz oil, drippings, and garlic butter. (The name Etta itself is a derivation of Hestia, the Greek goddess of the hearth.) At Etta, the menu will include pizza cooked on the hearth, house-made pasta, fire-baked focaccia, and dishes like wood-roasted oysters. Grant left the restaurant to strike out on his own, and many of the restaurants he helms with What If Syndicate are built around the concept of a wood-fired grill, including dishes like charred prawn and fire-roasted octopus at Monarch, and wood-fired steaks and pork chops at Maple & Ash. Grant first gained fame at upscale Chicago French restaurant RIA, which earned two Michelin stars before its closure in 2012. Another What If concept, which has yet to be announced, will also go into the Texas Tower’s pavilion area. Now, a second Texas Etta has been announced, this one going into the brand new Texas Tower highrise at 601 Travis Street in Downtown Houston. Just a few months after those spots opened in March, What If announced that two more Dallas restaurants - neighborhood-focused eatery Etta, and celebrated steakhouse Maple & Ash - were headed for the Big D. The move comes after What If chef Danny Grant has spent the last year taking over Dallas, first opening Monarch, a luxe Italian eatery, and Kessaku, a sushi restaurant, in that city’s National Building Downtown. Or, The Celebration is a fun and festive treat–whether there’s a birthday, a promotion or just the start of the weekend to honor. The sticky toffee cake is a stellar way to wrap up a meal at etta, topped with bourbon toffee sauce, pepita granola and vanilla ice cream. The fire-seared whole branzino is not to be missed, paired simply but deliciously with parsley, lemon and capers. When it comes to entrees, etta has a divine selection of wood-fired pizzas and decadent pastas, as well as sizable “for the table” proteins. The vibrant veggies are served on a swipe of whipped miso and accented with gremolata and spiced marcona almonds for a delicate crunch. The hearth-roasted heirloom beets is one Scottsdale’s more unique beet salads. The bubbling shrimp, a Chef Grant signature, with ginger, chile, mint and smoked tomato, is a sizzling, savory favorite, as well. The warm focaccia, paired with whipped ricotta topped with honey and black truffle, is comforting and decadent and dreamy. Though filling up on bread at the start of a meal isn’t usually recommended, the fire-baked focaccia on the starter menu is the exception to the rule. The restaurant has a lengthy wine list, as well, with offerings by the glass or bottle. Even four-legged guests have a spot at etta, thanks to its lovely, gardenlike pup-friendy patio.Ĭozy up in a large booth or grab a seat at the bar to sip one of etta’s incredible cocktail offerings, including the Desert Fromage, with black pepper feta-washed vodka, peach, citrus and angostura, or the crowd-pleasing etta ‘rita, topped with a tajin rim.

With a name that is short for Henrietta, meaning “keeper of the hearth” in French, etta serves up wood-fired dishes, from rack-roasted oysters to fire-seared branzino, in a setting that is casual enough for a family dinner of wood-fired pizzas and pasta and also fitting for a date night or special occasion with friends. Just last month, etta opened at Scottsdale Quarter in the space formerly housed by BRIO.

The casual neighborhood eatery is the second Valley concept from What If Syndicate, the hospitality group behind Maple & Ash. From Michelin-starred Chef Danny Grant, etta is newly opened at Scottsdale Quarter.
